Bacon Sweet-Potato Hash
Ingredients
- 4 slices bacon
- 2 medium (130g each) sweet potatoes, diced into 1/4- to 1/2-in chunks
- 1/2 medium (55g) onion, finely diced
- 4 cups loosely packed fresh spinach
- ⅛ tsp salt (or to taste)
- ¼ tsp ground black pepper (or to taste)
- 2 large eggs
Directions
Heat a medium skillet over medium-high heat, and add the bacon. Cook the bacon until the fat is rendered and the bacon is crispy. Remove the bacon, and set aside.
Add the sweet potatoes to the skillet and cook for about 10 minutes, stirring occasionally, until lightly charred in spots and fork-tender. Add the onion, and cook for another 3 minutes. Add the spinach, and tear in the bacon slices. Cook until the spinach is wilted. Sprinkle it with salt and pepper to taste.
Lower the heat to medium-low. Use a spatula to create two holes in the hash mixture. Break one egg into each hole. Cook the eggs until desired doneness. Portion out onto 2 plates, and serve.
