PROTECT YOURSELF with Orgo-Life® QUANTUM TECHNOLOGY
Orgo-Life the new way to the future Advertising by AdpathwayThis easy one-dish meal offers the best of spring produce alongside chicken cutlets — vibrant asparagus, creamy fingerling potatoes, artichoke hearts, and tarragon. To make prep simpler, we use frozen artichokes instead of fresh. They taste much closer to fresh artichokes than canned, but you can use those in a pinch.
RD Tip: Asparagus contains a special kind of fiber called inulin, a prebiotic that feeds the healthy bacteria in your gut. Regular intake of inulin-rich foods has also been associated with lower blood pressure and reduced inflammation (1).

Spring Chicken & Asparagus Skillet
Ingredients
- 1 cup (150g) fingerling potatoes, halved
- 2 tbsp olive oil, divided
- 4 (4-oz/113g) chicken breast cutlets
- 3/4 tsp kosher salt, divided
- 1/2 tsp ground black pepper, divided
- 1 cup (96g) leeks, sliced
- 2 garlic cloves, minced
- 1/2 cup (120g) no salt added chicken stock
- 12 medium asparagus spears (205g), trimmed and sliced into 2-inch segments (about 2 cups)
- 1 cup (142g) frozen artichoke hearts, thawed
- 1 tbsp chopped fresh tarragon
Directions
Preheat the oven to 400°F (200ºC). Place the potatoes in a microwave-safe bowl; cover and microwave on high for 5 minutes.
Meanwhile, heat 1 tbsp oil in a large ovenproof skillet over medium-high heat. Sprinkle the chicken evenly with 1/4 tsp each salt and pepper. Add the chicken to the pan; cook until just browned on the bottom, about 2 minutes. Turn the chicken over and cook for 1 minute. Remove the chicken from the pan (chicken will not be fully cooked).
Add the remaining 1 tbsp oil to the pan and swirl to coat. Add the leeks and garlic; sauté 2 minutes. Stir in the chicken stock and remaining 1/2 tsp salt and 1/4 tsp pepper. Add the asparagus, artichoke hearts, potatoes and tarragon. Nestle the chicken into the pan and place in the oven. Bake until the chicken is cooked through and an instant-read thermometer registers 165°F (74°C), about 10 minutes.
