Ingredients
Cottage cheese spread
200 g cottage cheese
5 g fresh chives finely chopped
5 g fresh parsley finely chopped
5 ml 1 tsp hot English mustard
Salt and freshly ground black pepper to taste
To assemble
700 g boneless chicken thighs
Olive oil for frying
4 wholewheat wraps
40 g baby spinach leaves
250 ml 1 cup grated mozzarella cheese
1 red or yellow pepper cut into thin strips
40 g bean sprouts
Method
- Place the cottage cheese in a bowl. Add the chives, parsley and mustard. Mix well, then season with salt and pepper to taste. Set aside in the fridge.
- Cut the chicken into bite sized chunks and season with salt and pepper.
- Heat some olive oil in a frying pan, then fry the chicken pieces until cooked through. Set aside.
- Warm the wraps as per the instructions on the pack. Spread a layer of cottage over each wrap, then layer the spinach on top.
- Sprinkle the mozzarella over the wraps, and top with chicken.
- Arrange the peppers and sprouts on top. Roll up and serve immediately.
